Cool Summer Recipes from GE

We haven't often shared favorite recipes on our blog, but right now in the heat of August these cool summer recipes from our friends at GE just felt right. We hope you agree. ENJOY:

Frozen Strawberry Daiquiri Pie

8 servings

Ingredients

1 10-ounce can frozen strawberry daiquiri mix

1 14-ounce can fat free sweetened condensed milk

1 8-ounce container of non-dairy whipped topping

4 large strawberries, chopped

1 8 or 9 inch prepared low fat graham cracker crust

Preparation

Allow whipped topping and strawberry daiquiri mix to thaw out in the refrigerator for a few hours

Combine all ingredients and pour into graham cracker crust

Cover and freeze

Garnish with whole strawberries, if desired

Cucumber Salad

6-8 Servings

 

Ingredients

2 cucumbers, sliced

1 large onion sliced and separated into rings

1 small red bell pepper, seeded and sliced into rings

1-pint sour cream (can use low fat or fat free)

4 tablespoons vinegar

2 tablespoons lemon juice

3/4 cup sugar

Preparation

Whisk together sour cream, vinegar, lemon juice and sugar until smooth.

Add cucumber and onion slices.

Refrigerate for several hours before serving.

 

Strawberry Spinach Salad

6 servings

Ingredients

Salad

1 pint fresh strawberries, sliced

1/4 cup slivered almonds

2 10-ounce fresh baby spinach bags

1/4 cup red onion, finely diced

pinch paprika

Dressing

1/8 cup sugar

1/8 cup apple cider vinegar

1/4 cup light olive oil

1 tbsp poppy seeds

1 tbsp sesame seeds

salt and pepper to taste

Preparation

Wash spinach leaves and spin dry; remove stem ends.

Toss sliced strawberries, almonds, spinach, diced red onion and pinch of paprika in a bowl.

Add dressing to the salad, mix well.
