Viking Turbo Chef Oven
New Viking Turbo Chef oven now in production We've written before about Viking's Turbo Chef oven. It's probably the first new technology in speed cooking for the home since the microwave oven. The air impingement technology is used widely in commercial applications by Viking's parent company, Middleby. However, this will be its first *serious launch for home use by a full-line major appliance company. The Viking Turbo Chef oven uses traditional radiant heating, combined with convection, microwave assist, and powerful Airspeed Technology™. Using patented jetplates on the top and bottom of the oven heated air is forced over the food at various speeds helping the food to cook up to 15 times faster than conventional ovens. Spring Cocktails
Spring has Sprung - Let's toast the season! Our friends from Jenn-Air were nice enough to share these Spring Cocktail Party drink recipes from Saveur Magazine. Each recipe is for one drink so just multiply out to prepare a pitcher for your party. For the Rhubarb Fizz, just double the batch of simple syrup as a base for each drink and add champagne accordingly. Rhubarb Fizz Credit: Helen Rosner MAKES ONE COCKTAIL INGREDIENTSFOR THE RHUBARB SYRUP1½ lbs rhubarb, stalks cut in half lengthwise and sliced into ½" pieces (to yield about 6 cups)¾ cup ginger beer¼ cup sugar8 cardamom seeds, crushed1 vanilla bean (about 3-4" long), seeds and pod FOR THE COCKTAIL1 oz. rhubarb syrup4 oz. brut champagne or sparkling wine INSTRUCTIONS1. Make the rhubarb syrup: Combine the rhubarb, ginger beer, and sugar in a small sauce pan. Simmer until the rhubarb the rhubarb is pulp and the liquid has been reduced by half. Add the cardamom seeds and vanilla bean and let steep for 30 minutes. Strain and cool. Makes about ½ cup of syrup, which will keep, refrigerated, for 2-3 weeks Pour 1 oz. rhubarb syrup into a chilled Champagne flute and top with Champagne. Perimeter Vent Hoods
Perimetric Ventilation A New Way of Venting Cooking creates smoke, odors, and airborne particulates. Vent hoods are needed to remove all this from the kitchen. For the most part, vent hoods do this with fans that pull the air from over the range or cooktop into the hood, through filters, and exhaust the air out. In the last few years, some hood suppliers have been using a perimeter suction system. Quite simply, rather than pull the air through large openings under the hood, the perimeter system creates suction by reducing the size of the openings to slits around the perimeter of the hood. Here are some of the appliance and vent hood companies now offering perimeter vent hoods: Whirlpool Whirlpool has recently introduced a chimney-style hood featuring perimeter venting with this claim: Perimetric venting technology concentrates kitchen hood suction to targeted zones on the cooktop while also reducing noise, an important feature considering that this hood has a powerful 400 CFM fan. The hood can provide even more noise reduction with the optional attic mounted in-line fan. Jenn-Air Jenn-Air was an early-adopter of the perimetric venting system with it's high fashion picture frame wall-mounted vent hood. It can be a nice focal point in the kitchen, and provides a powerful 600 cfm blower which is ideal as an accompaniment to one of Jenn-Air's powerful cooktops or ranges. 2 New Ranges from Jenn-Air
Downdraft and Center Burner Models DebutA Quick Look at 2015 Jenn-Air RangesWe thought 2014 was the year of the slide-in range for Jenn-Air with their new full-depth slide-in ranges that seem to double as freestanding ranges. But new range products continue as Jenn-Air begins 2015 with a 5 burner gas range sporting a center oval burner with a high-powered 19,000 btu dual-stacked power burner. Also, Jenn-Air is launching a new 30" dual-fuel downdraft range that accepts an optional duct-free kit for the most flexibility available for anywhere venting. We really like the look of these ranges, and the fit is impressive also. The new Jenn-Air ranges could be considered slide-in ranges that work as freestanding ranges or vice versa. Since they are full-depth ranges with front controls, no added backsplash or trim is needed.JGS1450D - Jenn-Air 30" Gas RangeWith brass burners including the 19,000 btu dual-stacked burner, this range adds a new center oval burner with an included die-cast griddle. Even though it has a giant 6.5 cu. ft. oven, there is an additional baking drawer underneath that can also be used to proof bread, or as a plate warmer. JDS1750E - Jenn-Air 30" Dual-Fuel Downdraft RangeJenn-Air is the expert in downdraft venting, and this range can be used as a conventional downdraft, or with an optional kit the range can be converted to duct-free operation. New Professional Home Appliances Updated
Pro-Style® Cooking Appliances are Changing The Pro-Look Gets a Sleek Update As professional looking appliances have gained popularity in luxury kitchens, they have often been mixed with sleek flush European style appliances. A Bosch or Asko dishwasher featuring a flush matching cabinet panel disappears into the cabinetry while nearby there is a Sub-Zero integrated built-in refrigerator with hidden hinges and door panels that match the adjacent cabinets. They're invisible as appliances and fit right in to the wall. Though it's not possible to do this with cooking appliances, manufacturers have made their cooktops and ranges much more sleek and contemporary-looking. This has become particularly noticeable recently, as even Professional Style appliances have become more flush, but still keep their Pro heritage. Check out the three entries below from Jenn-Air, Wolf, and Miele. Jenn-Air Jenn-Air's new 30" and 36" Pro-Style® cooktops have undergone a complete redesign. Not only have they added more power and new brass burners, but the surface of the cooktop itself is as near to flush as you can get without being inset into the counter. The heavy duty knobs still have a Pro look and feel, but they are somewhat less obtrusive. By the way, the term Pro-Style® is a registered Jenn-Air trademark. Wolf Wolf's new "M" Series Professional Oven still sports their signature red knobs, but also has touch electronic controls that work in conjunction with the knobs. Wings for the Weekend - New Recipe

Jenn-Air was nice enough to share the below recipes from celebrity chef Curtis Stone, and we're passing them on to you. It's a change of pace from the hearty, sauce laden buffalo wings you may be used to, but don't be deceived if you think this is going to be mild. The Green Curry Paste is Thai, and it can pack a wallop! The recipe for Curtis Stone's Wings below is accompanied by the recipe for his Green Curry Paste, and it looks yummy. If, however, you want to take a shortcut you should be able to find green curry paste at an asian grocer or even online. WINGS The longer it marinates, the more flavor the chicken takes on. Fire up the grill or broiler and cook as many as you need to satisfy that snack craving—double or triple the recipe for larger groups. Or as part of a meal, use chicken drumsticks, thighs, or breasts instead of wings and adjust the cooking time accordingly. Ingredients 12 whole chicken wings 1 cup plus 1 tablespoon Green Curry Paste 1 tablespoon butter, at room temperature Chopped fresh cilantro, for garnish 1 lime, cut into wedges Cut the chicken wings through the center joint to separate the drummettes. New Ranges at UAKC
New Slide-In Ranges from GE, Electrolux, and Jenn-AIr What's a slide-in range? Traditionally, there have been significant differences between a slide-in range and a freestanding range. Slide-in ranges normally have unfinished sides because, just like wall ovens or drop-in ranges, slide-in ranges are designed to be installed into adjacent cabinets, and their sides are not visible. In addition, slide-in range tops are not designed to go all the way to the back wall. As you can see in the Electrolux diagram, a strip of the countertop extends along the back wall, giving a built-in look as well as the ability to run countertop molding across the back improving sightlines. The cooking surface or range top trim is designed to overlap adjacent countertops. The idea is to give the appliance a built-in look suggesting that the cooktop and range were completely separate items. Today, things are changing. The GE Profile double oven range featured below meets only 1 of the 3 definitions, the top surface overlaps the countertop, but the range has finsihed sides, and the range top goes all the way to the back wall so that no countertop or trim strip across the back can be accommodated. The Electrolux appears to be a true slide-in range. And the new Jenn-Air (coming Dec. 1), is really a freestanding range that looks very much like a slide-in range. What does all this mean for you?
