The Next Innovation In Cooking from Miele

Miele Combi-Steam oven

As the pioneer in steam oven technology, Miele has perfected the art of steam cooking. Building on that expertise, the introduction of Miele’s Combi-Steam oven promises gourmet results — whether using steam, convection or a combination.

When choosing combination cooking, steam and convection work together to transfer heat more efficiently, proving ideal for locking in the moisture of meats or cakes, yet browning the exterior of items such as poultry to perfection. The result? Excellent quality with flawless taste.

MasterChef Gourmet Programs

For a lasting impression at your next dinner party, automatic programs for Turkey, Chicken, Salmon, Beef Tenderloin and Baby Back Ribs use slow cooking methods by combining lower temperatures and longer cooking times for the most tender and juicy results with a richly browned crust.

Lift-Up Control Panel:

With the simple touch of a button, the control panel automatically lifts up, allowing for easy access to the dishwasher-safe water and condensate containers. Then a quick and safe return of the control panel re-integrates your oven into the seamless design of your kitchen.

XL PerfectClean Cavity:

If you like to entertain, the extra large capacity of Miele’s Combi-Steam oven allows for more flexibility and larger dishes. As compared with Miele’s steam oven, the Combi-Steam oven capacity boasts a 40% increase in space, made possible by the location of the water and condensate container behind the lift-up control panel.

CleanGlass Door:

Offering a flush and smooth surface inside the door, the CleanGlass door makes cleaning up after your meal a breeze. Plus the door provides a durable and stable surface to place dishes, holding up to 17lbs in weight, thanks to the ingenuity of the stability hinges.

One of the greatest frustrations for chefs is putting a lot of hard work into a dish only to get inconsistent results due to cold spots in an oven. You shouldn't have to rotate pans, place multiple thermometers throughout the oven, or perform tricks in order to get consistent, even results.

KitchenAid researchers have studied the science of creating consistently reliable heating and developed Even-Heat(TM) Technology – an innovative feature that helps deliver exceptional cooking results. Gail Bruce, senior brand manager at KitchenAid says, “Our new line of built-in ovens and freestanding ranges are designed for consumers who are passionate about cooking, understnd convection, and expect more from their appliances. Even-Heat(TM) Technology meets their high standards by delivering exceptionally even heat, every time.”

Even-Heat(TM) Technology combines innovative features to generate heat in multiple spot and spreads it evenly throughout the oven. The result is ovens that deliver the most even baking* and ranges that feature the most even baking across all racks. **

HELPS REMOVE COLD SPOTS- Cold spots are the result of an oven that has not consistently distributed heat to the set temperature when baking/cooking starts. KitchenAid built-in ovents and freestanding ranges feature Even-Heat(TM) Preheat. The entire oven, including the walls and racks are heated to the correct temperature. This means that the entire oven reaches its set temperature quickly and maintains that temperature so you can get even results.

NO PEEKING INSIDE TO GET GREAT RESULTS- The Even-Heat(TM) True Convection System helps ensure that properly preheated air circulates over, under, and around every rack. This creates perfectly baked center and goldeb browning without the burnt edges. There's no need to open the oven door to check on progress, or rotate pans and cookie sheets to different rcks. But for those consumers who absolutely have to look, they've made their oven windows among the largest so they can see from edge to edge without opening the door.

COVERS EVERY COOKING NEED- You can enjoy the innovative benefits of Even-Heat(TM) Technology in a configuration that fits your kitchen. Available in 30 and 27 inch single, double, and combination ovens, the most complete selection of Even-Heat Technology ovens can be found at Unversal Appliance and Kitchen Center in Studio City, or Calabasas.

Yellow Pages. Seriously? Do they still have these?

Newspaper. Ditto. Well, OK they're still around, but don't hold your breath.

Here's an idea! Go to Universal Appliance and Kitchen Center (UAKC). There's a Grand Opening going on at their new Calabasas Location and they're also celebrating at the Studio City location.

UAKC Showroom Locations

Now with two stores, they've got you covered. The same great selection, service, and low prices. So if you're coming from Moorpark or Thousand Oaks, Universal Appliance and Kitchen Center (UAKC) is just a short drive away. Even from Oxnard or Camarillo, UAKC in Calabasas is the place for you to shop for new appliances. And if you're in Agoura Hills, Northridge, or Woodland Hills…Calabasas says…howdy neighbor!

For all of our friends in Beverly Hills, Burbank, or the Hollywood area we still have the same great location in Studio City at the corner of Ventura and Laurel Canyon Boulevards.

Here's a sneak peak at the beautiful display in their new Calabasas showroom.

KitchenAid’s collection of wall ovens featuring Even-Heat technology are designed to help cooks achieve consistent results in the kitchen. Offering ample cooking space, the true convection system combines a bow-tie shaped baffle with a convection fan and element to circulate heated air around all three racks to provide even baking. In addition, the preheat feature initially heats the oven above the set temperature to ensure that the entire oven, including the walls and racks, are heated to the right temperature. The SatinGlide roll-out extension rack features smooth rolling, ball-bearing glides to help maneuver large, heavy dishes like roasts or casseroles. The ovens retail from $1,549 – $4,749.

If you have a convection range or oven and don't use it, or if you are considering a new range or oven here are the essential facts you should know.

Here's how convection works – the theory behind convection cooking.

Convection Oven

Convection ovens rapidly move hot air past food making it possible to cook better, faster, and at a lower temperature. They are fan operated to force the hot air over and around the food, and typically have separate convection elements surrounding the fans to assist in providing heat. Most residential convection ovens are selective use. This means that users can choose when to use convection and when not to use convection.

Here are the important advantages and disadvantages of convection cooking.

Advantages

Using convection for roasting reduces cooking time by as much as 25%.

Using convection for baking provides consistent results cooking at a lower temperature for the same amount of time.

Because of the consistent temperature throughout the oven cavity, using convection allows for cooking on all the racks at the same time. Cookies baked on the top rack will come out exactly the same as cookies baked on the bottom rack.

Cooking with convection will provide superior results. Roasts will have a dark caramelized exterior, and remain juicy and tender inside. Baked goods will brown evenly and stay moist.

Disadvantages

Convection cooking may require adapting standard recipes to achieve proper results.

There is no benefit to using convection in casserole dishes or other containers that do not allow hot air to circulate around the food. For example, there is no reason to use the convection feature to bake Lasagna.

Here is what you should consider before buying.

All convection ovens are not created equal. Each manufacturer will tout their specific convection system as having better features than than others. Here are some feature differences and explanations. You should decide for yourself which features to consider in your purchase decision.

Does the convection system have a heating element surrounding the convection fan? Most convection ovens will have a heating element surrounding the fan or fans. The element may cycle on and off in accordance with the thermostat, or depending on the type of food being cooked to provide precise results. Some convection ovens do not have separate elements surrounding the convection fan. Heat is provided only by the bake element in the bottom and broil element in the top of the oven. The fan merely circulates the existing oven air.

Does the fan operate at different speeds for different foods? Ovens with this capability will use a higher fan speed for roasting meets and a lower fan speed for baking.

Does the oven have more than one fan? Some ovens have two fans for better coverage. The fans may be surrounded by a single “bow-tie” or “butterfly” type element or individual elements.

Do the controls have an auto-conversion feature? Though there are a variety of systems for converting recipes, many ovens are equipped with controls that provide an automatic method of converting recipes from conventional to convection.

Though the above are some of the key features to consider, oven manufacturers might have their own pet or exclusive features or explanations of how their ovens differ. You may hear of different methods of pulling or pushing the air through the oven cavity or channeling air in a certain fashion. Decide for yourself whether these pitches are marketing hype or whether they provide significant points of differentiation.

Convection has proven to be reliable and effective method for cooking most foods, and provides superior results. For more information on cooking with convection consult the experts at Universal Appliance and Kitchen Center.

A very popular configuration in the kitchen has become a cooktop with a wall-oven underneath. It's a space saving solution that has good esthetics with a nice uninterrupted site line on the countertop as well as several other advantages over a freestanding or slide-in range.

Customers are often frustrated however, that when they choose a cooktop that is 36″ wide, the oven is only 30″ wide and therefore doesn't really match. Not to worry. Wolf makes a great 36″ wall oven that will fit nicely under your choice of 36″ cooktops.

Its unframed door design gives the Wolf L Series 36″ Built-In Single Oven a contemporary look. Dual convection delivers superior results and faster cooking; the temperature probe gives you fine control. The easy-to-use electronic control panel rotates into position. When not in use, it’s hidden behind a stainless steel panel.

No compromise: you get the 36″ cooktop you want and have a great 36″ oven underneath. Just look at the list of features that your new Wolf oven will come with:

The Wolf wall oven sets itself apart by offering two convection fans, instead of just one, and four heating elements that work in conjunction with one another to provide the most effective method of maintaining consistent even heating in an oven cavity, allowing multiple pans to be cooked at the same time with no hot spots and no rotating.
