Holiday Baking Tips
Last Minute Baking Tips from GE Appliances Range - Optimal Baking Performance Many factors will affect the baking time in your oven. To insure accurate baking, we suggest the following: Be sure to preheat the oven to the selected temperature. (This can take 10-20 minutes, and most models will have a signal that will alert you when the oven is ready.) Be careful not to place the oven rack too close to the bottom of the oven. Follow the instructions in the Owner's Manual for proper rack placement. Dark colored pans absorb more heat and can cause over-browning. Solution: Lower oven temperature 25 degrees for this type of utensil, or use a pan with a shiny finish. Do not use pans that are too large or too close to each other or the oven walls. Solution: Make sure there is proper room for the heat to circulate up through the racks and around the food in the pans. Non-stick gray pans retain more heat and require a temperature reduction of 25 degrees from what the recipe calls for. Glass pans require temperature reductions, which can usually be found on the baking instructions. Do not open the oven door while baking any more than necessary. (If you do not have a window in the door, we suggest using a kitchen timer and check your food at the minimum baking time. Use your oven timer and do not check for doneness until the minimum cooking time expires. This will help keep the -

Viking Brigade Ranges - Restaurant style for your home
You would have to open a restaurant to cook with more power. Coming soon - Viking Brigade. The Viking Brigade appliance series is inspired by Viking's commercial appliance line, but built for your home. Sharing features that restaurants and professional chefs demand, Viking Brigade ranges will be available in a choice of looks including a solid stainless steel option (below) with heavy duty metal knobs. While the solid oven door lacks the ability to check the turkey without opening the oven, it definitely gives the range a true restaurant look. Just take a look at these optional restaurant grade stainless steel grates (heavy duty cast-iron grates are standard). The commercial quality burner caps are made from brass for durability and burners themselves are Viking VariSimmer™ burners modeled after professional restaurant burners with high power settings of 23,000 btus on each of the three front burners, the industry's most powerful to date. Each burner is equipped with Viking's SureSpark™ electronic ignition system.Your Viking Brigade range will be custom built for your specific needs. The huge 5.8 cu.ft. oven on the 36" range will hold a full-size commercial sheet pan. The extra depth required for the sheet pan means this range will be deeper than standard ranges. The oven includes 3 heavy duty full extension TruGlide™ rollout racks. Even the interior of this commercial sized oven is stainless steel. Powering this oven is a U-shaped 30,000 -

Taking a Look at GE's New Slate Appliances
Slate: A new color from GE that's not quite Stainless Steel GE has launched a new appliance color, Slate, that quite literally takes the shine off stainless steel. It's worth a look. The muted grey finish really goes well with a variety of cabinet as well as countertop finishes. GE says that it not only looks good in a matched suite, but also works well in a kitchen with Stainless or other color appliances. The shiny brushed metal touch points (knobs, handles, etc.) provide a bit of contrast and also help bridge the slate color to tie together with stainless or other brushed finishes in a kitchen. Unlike Stainless Steel, the Slate finish resists fingerprints and is easy to keep clean. The subdued slate color is both unique and sophisticated. Offsetting a flat finish with bright polished accents gives the appliance an eye-appealing, streamlined look. The Slate Collection from GE includes a Freestanding French-Door Refrigerator, a choice of Ranges in both Electric and Gas, Over the Range Microwave, and Dishwashers. See selected slate products and features below: GE® ENERGY STAR® 28.6 Cu. Ft. French-Door Ice & Water Refrigerator GFE29HMDES Slate finish Express your unique style and harmonize your kitchen space with this sophisticated, rich and amazingly versatile matte metallic finish Dual icemaker An icemaker in both compartments gives you more ice whenever you need it TwinChill™ evaporators Separate climates in the fresh food and freezer sections help maintain temperature and humidity levels to keep foods fresh Advanced filtration system GE’s -

A Primer on Convection Cooking
What you should know about convection cooking. If you have a convection range or oven and don't use it, or if you are considering a new range or oven here are the essential facts you should know. Here's how convection works - the theory behind convection cooking. Convection ovens rapidly move hot air past food making it possible to cook better, faster, and at a lower temperature. They are fan operated to force the hot air over and around the food, and typically have separate convection elements surrounding the fans to assist in providing heat. Most residential convection ovens are selective use. This means that users can choose when to use convection and when not to use convection. Here are the important advantages and disadvantages of convection cooking.Advantages Using convection for roasting reduces cooking time by as much as 25%.Using convection for baking provides consistent results cooking at a lower temperature for the same amount of time.Because of the consistent temperature throughout the oven cavity, using convection allows for cooking on all the racks at the same time. Cookies baked on the top rack will come out exactly the same as cookies baked on the bottom rack.Cooking with convection will provide superior results. Roasts will have a dark caramelized exterior, and remain juicy and tender inside. Baked goods will brown evenly and stay moist.Disadvantages Convection cooking may require adapting standard recipes to achieve proper results. There is no benefit to using convection in casserole dishes or other containers that do -
