Cooking Modules
Among the many choices customers get to make when considering cooktops are the various individual cooking modules that are available. For example Wolf has both gas and electric radiant modules, induction modules, and individual fryers and steamers that call all be lined up to make a complete cooking solution. In the picture below we see a 4 burner gas cooktop with a separate grill module, and a single wok burner. German manufacturer Miele has some unique cooking modules in 12" and 15" wide configurations that they call CombiSets. These modules include a Tepan Yaki Japanese style griddle, induction, gas, boiler/fryer, wok, and barbecue units. Another German manufacturer, Gaggenau, has a similar collection of modules and offers an exclusive Vario(tm) downdraft unit for ventilation. Modular Cooking Systems
Modular cooking systems have been around for quite a while, but it seems that there's always something new to talk about. Bertazzoni has introduced a unique series of segmented cooktops that makes it possible to combine a versatile dual burner cooktop module, with an electric griddle, and a two element induction module. Customers can mix and match modules to get just the right combination of modules for their specific cooking styles in a single 36" cooktop. Many luxury brands offer various modular cooking solutions. Black is the new kitchen color trend.
One of the trends most talked about at the KBIS 2012 Kitchen and Bath Industry Show was more color in kitchens. Of the colors shown and discussed, black was a clear winner. Black can provide a nice contrast with almost any color scheme, and works very well to complement the sea of white and stainless so common in today's kitchens. Black Appliances Black is not new as a category in appliances, but selection is definitely improving in high end appliances that have focused primarily on Stainless Steel finishes. Wolf appliances showed a black glass front wall oven that received a lot of attention at the show. Dacor displayed its Renaissance wall oven in a black glass version. Smart Appliances are spreading.

"Incorporating technology within our products reinforces our commitment to improving our customers' ownership experience," said Michele Bedard, vice president of marketing for Sub-Zero and Wolf. The Smart Appliance App provides an alert system that allows meals to be monitored from anywhere in the home. The system's functions include notifications of pre-heat and timer completion, current oven temperature, and knowing when meals are finished cooking based on the internal temperature probe's reading. System alerts can notify homeowners when the refrigerator door has been left open, helping to prevent temperature variances that lead to food spoilage. The app can also maximize energy efficiency by lowering the refrigerator's power consumption at different times of day. Specific lifestyle needs and preferences such as increasing ice production prior to entertaining, saving energy in vacation mode and choosing the Sabbath mode for religious observances can also be met by the software. An additional benefit of the technology is an enhanced service experience. General service requests can be sent directly to Wolf and Sub-Zero's certified service professionals through the Control4 system, leading to quicker diagnosis and resolution of problems. Cooking with steam
Remember the pressure cooker? Ever had a rice steamer? Cooking with steam has been around for a long time, yet major appliances have begun adding steam features to their ovens and ranges as if they'd discovered something new. Ovens with steam are available in countertop versions, wall ovens, or in ranges. Brands include Sharp, Miele, Thermador, KitchenAid, Gaggenau, Wolf, and Viking. Most people are probably familiar with steamed vegetables or at least steamed rice. In addition to the obvious benefits of the freshness of steamed vegetables, cooking quickly at lower temperatures also helps retain important vitamins and minerals. Proponents of steam cooking also point out the benefit of reduced fat content. Fat helps keep food moist, but that's not necessary when using steam, so less fat and no basting is necessary. Gourmet Chefs will marvel at the ability to use a steam oven to make stunning creme brule without a water bath, or to bake fresh moist salmon avoiding the fish en papillote (parchment) regimen. Don't be afraid of convection.
We've been selling convection ovens in the U.S. for decades. Yet, there are still many customers out there who shy away from convection for several reasons. Here are some important points to keep in mind: Convection is an option. Though I regularly use this feature in my oven at home, there are times when I elect not to use it. My wife usually does not use convection, but there are times that she chooses to. It's up to you whether you want to use the convection feature in your oven or not. Convection is easy to use. Many convection ovens today have an auto conversion feature allowing you to set your oven just as you normally would. The oven then converts the time/temperature as needed for convection cooking of your favorite recpe. Convection is more expensive. Well, yes. However, in most cases if you want a manufacturer's better range or oven convection is an included feature - just as power steering and automatic transmission is more expensive, but you can hardly get a car without it.
