Roast Chicken Dinner from WOLF Appliances at UAKC
Reclaim the Kitchen with Wolf Ranges and Ovens Two days ago we gave you the recipe for the Roast Chicken pictured below (click on the link Roast Chicken for the recipe). Today we're adding the recipe for the Potatoes and Asparagus (thanks to Sub-Zero/Wolf). Roast Chicken with Potatoes and Asparagus Potatoes and Asparagus For the potatoes:1½ pounds small Yukon gold potatoes1 tablespoon of fresh thyme, chopped1 tablespoon olive oilKosher saltFreshly ground black pepper For the asparagus:1 pound asparagus spears, ends trimmed Wash and dry the potatoes and then quarter them with a small paring knife. Place the quartered potatoes in a medium sized work bowl. Add the remaining ingredients and toss to combine. Pour the potatoes on a baking sheet lined with parchment paper (this will ease clean up and keep the potatoes from sticking to the pan). Without preheating, place the chicken and potatoes into the oven. Select the convection mode and set the temperature to 375°F. Set a timer for one hour. After one hour, remove the chicken and potatoes from the oven and place the pans on a heatproof surface. Use a thermometer to make sure the chicken is cooked thoroughly. Tent the chicken and potatoes with foil and allow to rest. Prepare the asparagus by steaming. Steam the asparagus until the desired doneness is achieved. Season with salt and freshly ground black pepper. Great Solutions for Small Kitchens
Designs and Ideas for Small Kitchen Spaces How to get by when you don't have room. *Designer Joanna Simmons suggests that if you have a tiny kitchen space, blow out the ceiling to create some volume. A skylight like the one pictured below might also help. I also really like the idea of pull-outs such as a cutting board or a drop-down table to create an instant eating area. Another idea is taller upper cabinets for extra storage if ceiling space allows. Depending on your cooking needs, forget the standard 30" range and consider a 24" or even 20" range. Some urban folks, rarely cook at home. You might consider a simple 2 burner cooktop supplemented by a convection microwave, or even better one of the new steam/convection ovens. There are lots of choices for built-in appliances that fit in a 24" cabinet. Creative lighting will help the room look more spacious. Consider under cabinet lighting. LED's give you a lot of light and take up little room. Of course, white or other light colors can make a room look bigger, and even small windows and skylights for natural light help enormously. If you can get by with an undercounter refrigerator, here's one from Danby that has a separate freezer compartment. Perhaps width, not height is the issue. Here's a Liebherr refrigerator that's a tall 79 inches in height, but only 24 inches wide. It's surprising how true the saying is "Necessity is the mother of invention." For more ideas -

Cooking with Convection How do convection ovens and ranges work? Wikipedia A convection oven (also known as a fan-assisted oven or simply a fan oven) is an oven that has fans to circulate air around food. Conventional ovens, which do not have fans, rely primarily on radiation from the oven walls, and to a lesser extent, on natural convection caused by temperature differences within the oven, to transfer heat to food. Depending on the brand and type of convection (see below) the benefits of convection cooking include: More even baking Cookies on multiple racks will come out perfectly cooking regardless of where they are placed. Faster roasting Your Thanksgiving turkey may be done 1/3 to 1/2 sooner than cooking conventionally. More flavorful The fan driven air circulation and speed of convection quickly browns roasts and other foods giving them a nice crust and sealing in juices and nutrients. True or European Convection European convection or "True" convection has an element surrounding the convection fan versus regular ol' convection that has a fan only - no third element. There is about a 50 year debate still going on about the differences and advantages of these two systems, and we're not about to step in it here except to say that you get to choose...and that's a good thing! High Speed Cooking in New Ovens Speed Ovens at Universal Appliance and Kitchen Center The Speed Cooking oven category has been around since the 1990's. All of the big mass brands now have some version of speed cooking, and several of the luxury brands also offer a speed cooking oven. They do this by using some combination of cooking methods including conventional electric elements, convection fans, microwaves, halogen lights, and "air impingement". You can find most of the brands offering speed cooking ovens at Universal Appliance and Kitchen Center. In addition to the obvious benefit of cooking food much faster, there are other benefits to owning a speed cook oven, one of which is tremendous flexibility. In general, these ovens gives you the choice of using conventional, convection, or microwave, as you please, OR in combination to get better results faster. The GE Advantium offers the biggest selection of speed cook models. Bosch is new to the category with their newly launched line of ovens including a speed cook model. Jenn-Air offers an auto sensor steam cook feature in their speed cook convection and microwave oven. The Viking Turbo Chef air impingement system will launch this fall. Air impingement technology speeds cooking by forcing preheated air into the oven at high speed through tiny holes. It's a high pressure version of convection cooking.
