Cooking and drinking tips for the holiday
Holiday Reminders for Cooking and Drinking Cooking Find your meat probe for roasting. If your oven has a feature allowing you to roast by temperature rather than time, you should use it. It is much more accurate. If you don't use this feature often, chances are that the temperature probe is hidden away with your instruction manual so you'll need to conduct a search ahead of time. Use the right pan for convection. The convection feature is wonderful for roasting and baking, but it's important to remember that the oven air needs to circulate around the food. If you have a roast or a bird sitting on the bottom of a roasting pan with high sides, you need to make sure that a roasting rack or trivet gets the meat above the pan sides so that convection air will encircle the food. Don't forget your low simmer burner. This time of year there are lots of sauces and soups that need to sit on the stove for a long time at a very low settings. If you're having trouble getting a low enough flame on your gas burner try checking to see if you have another burner on your range with a lower simmer setting. Most ranges and cooktops today will have at least one burner capable of maintaining a very low flame, whereas the power burner probably won't be able to turn down low enough for your sauce. Double check your recipe ingredients. Nothing worse than thinking you had -

Holiday Baking Tips
Last Minute Baking Tips from GE Appliances Range - Optimal Baking Performance Many factors will affect the baking time in your oven. To insure accurate baking, we suggest the following: Be sure to preheat the oven to the selected temperature. (This can take 10-20 minutes, and most models will have a signal that will alert you when the oven is ready.) Be careful not to place the oven rack too close to the bottom of the oven. Follow the instructions in the Owner's Manual for proper rack placement. Dark colored pans absorb more heat and can cause over-browning. Solution: Lower oven temperature 25 degrees for this type of utensil, or use a pan with a shiny finish. Do not use pans that are too large or too close to each other or the oven walls. Solution: Make sure there is proper room for the heat to circulate up through the racks and around the food in the pans. Non-stick gray pans retain more heat and require a temperature reduction of 25 degrees from what the recipe calls for. Glass pans require temperature reductions, which can usually be found on the baking instructions. Do not open the oven door while baking any more than necessary. (If you do not have a window in the door, we suggest using a kitchen timer and check your food at the minimum baking time. Use your oven timer and do not check for doneness until the minimum cooking time expires. This will help keep the -

Better Cooking Results Using Even-Heat Technology
Maintaining even temperature throughout your oven. One of the greatest frustrations for chefs is putting a lot of hard work into a dish only to get inconsistent results due to cold spots in an oven. You shouldn't have to rotate pans, place multiple thermometers throughout the oven, or perform tricks in order to get consistent, even results. KitchenAid researchers have studied the science of creating consistently reliable heating and developed Even-Heat(TM) Technology - an innovative feature that helps deliver exceptional cooking results. Gail Bruce, senior brand manager at KitchenAid says, "Our new line of built-in ovens and freestanding ranges are designed for consumers who are passionate about cooking, understnd convection, and expect more from their appliances. Even-Heat(TM) Technology meets their high standards by delivering exceptionally even heat, every time." Even-Heat(TM) Technology combines innovative features to generate heat in multiple spot and spreads it evenly throughout the oven. The result is ovens that deliver the most even baking* and ranges that feature the most even baking across all racks. ** HELPS REMOVE COLD SPOTS- Cold spots are the result of an oven that has not consistently distributed heat to the set temperature when baking/cooking starts. KitchenAid built-in ovents and freestanding ranges feature Even-Heat(TM) Preheat. The entire oven, including the walls and racks are heated to the correct temperature. This means that the entire oven reaches its set temperature quickly and maintains that temperature so you can get even results. NO PEEKING INSIDE TO GET GREAT RESULTS- The Even-Heat(TM) True -

A Primer on Convection Cooking
What you should know about convection cooking. If you have a convection range or oven and don't use it, or if you are considering a new range or oven here are the essential facts you should know. Here's how convection works - the theory behind convection cooking. Convection ovens rapidly move hot air past food making it possible to cook better, faster, and at a lower temperature. They are fan operated to force the hot air over and around the food, and typically have separate convection elements surrounding the fans to assist in providing heat. Most residential convection ovens are selective use. This means that users can choose when to use convection and when not to use convection. Here are the important advantages and disadvantages of convection cooking.Advantages Using convection for roasting reduces cooking time by as much as 25%.Using convection for baking provides consistent results cooking at a lower temperature for the same amount of time.Because of the consistent temperature throughout the oven cavity, using convection allows for cooking on all the racks at the same time. Cookies baked on the top rack will come out exactly the same as cookies baked on the bottom rack.Cooking with convection will provide superior results. Roasts will have a dark caramelized exterior, and remain juicy and tender inside. Baked goods will brown evenly and stay moist.Disadvantages Convection cooking may require adapting standard recipes to achieve proper results. There is no benefit to using convection in casserole dishes or other containers that do -
