Black Eyed Pea Salad for the New Year
Chef Covelli’s Kitchen Secrets A new recipe to get the New Year started right If you're looking for fresh recipes to start out the New Year in 2015, try this tasty salad from Chef Chris Covelli. I first met Chris at The International Builder Show (IBS) in Orlando in 2006, worked with him at a number of events over the succeeding years, and recently re-connected with him in Seattle where he was brought in to open a fine dining Italian restaurant at the Pike Place Market. The salad recipe below is a great example of Covelli's versatility. Everytime I think I've got Chris figured out, he shows me that he's got another side. You're going to love the freshness of this salad along with the flavorful bacon crunch. Black Eyed Pea & Smoked Bacon Salad Ingredients16 oz. Black eyed peas (pre-soaked and cooked)1 lb smoked bacon (cooked until crispy and minced)½ cup minced carrots½ cup minced celery½ cup mice red onion¼ cup fresh lemon juice1 cup Spanish Extra Virgin Olive Oil½ cup white wine vinegar¼ cup fresh cilantro (minced)salt & pepper to taste Directions1. Place all your ingredients in a bowl and mix until well combined.2. Place in the refrigerator and chill for 2 hours.3. Two Baked Ham Recipes: Two Different Glazes Recipes by Trisha Yearwood and Georgia Downard from the Food Network Ham glazes can be sweet and sugary such as Trisha Yearwood's recipe below with the brown sugar honey glaze, or they can be sweet with a little kick like Georgia Downard's brown sugar mustard glaze. Either way, you're going to have a succulent feast for your group. Baked Ham with Brown Sugar Mustard Glaze Recipe courtesy of Georgia Downard Directions Preheat oven to 350 degrees Score top of ham into diamonds and stud center of each diamond with a clove. Place ham on a rack in a roasting pan and bake for 1 1/2 hours. In a bowl combine the sugar, mustard and vinegar and spread glaze evenly over ham. Bake for another 35 minutes Transfer ham to a platter and let stand 15 minutes before carving. Combine cloves, sugar and mustard and brush over Ham Steak. Bake in baking dish in 350 degree oven for 15 minutes until heated through. Brussel Sprouts A Great Side Dish for the Holidays You're gonna love these two recipes! I get it. Maybe you had a bad experience with brussel sprouts. Me, too. Overcooking brussel sprouts can bring out the worst in them. Tough, chewey, and bitter. But tender brussel sprouts with the right ingredients can be quite delightful, and they're good for you. Here are two brussel sprouts recipes that you're going to love. Brussel Sprouts with Bacon Ingredients~2 lbs brussel sprouts~1/4 pound bacon, dicedhandful of pecan pieces2 tablespoons maple syrup (optional)salt and pepper to taste Instructions Cut the stems from the brussel sprouts, deeply scoring the sprouts, or cutting in half. Discard the stems. Steam the brussel sprouts until they just start to change color and turn translucent, about 10 minutes. They should still be a bright, bright green when you remove them. Add the bacon pieces to a pan with about 1/4 cup water. Cook on medium-high heat until the water evaporates, then on medium heat, stirring occasionally. Add the brussel sprouts to the pan and fry in the bacon fat, stirring every 2-3 minutes, until they are golden brown on most sides. Add the pecans, salt, pepper, and, if using, the maple syrup, and fry for another 2 minutes or so, stirring constantly. Serve and enjoy!
